- 8 yellow or red potatoes, diced
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 pound bacon, diced
- 1/2 onion, diced
- 5 cloves garlic, minced
Directions:
- Fry bacon in your soup pot
- Add garlic/onion/salt/pepper and saute
- Add potatoes and other ingredients, then cover in water
- Bring to a boil, then simmer, covered, over low heat, for an hour
- Take a potato masher and mash up the potatoes until the soup looks creamy.
- Can and freeze.
